The Wizard's Famous Graham Cracker Cake


1/4# butter - room temp 
1 cup sugar 
3/4 cup Half & Half 
2 teaspoons baking powder 
1 tsp. vanilla 
4/5 cup chopped walnuts 
3 eggs 
26 graham crackers (single squares - a full cracker is 2 squares) 
        (Nabisco Honey Maid Honey Graham rolled fine) 
Wesson Oil 
Cast Iron Skillet / pan


Let butter warm to room temp (or warm in Microwave, 30 sec. at half power)

Preheat oven to 400 degrees.  Warm pan.

Measure 1 Cup of Sugar, pour into mixing bowl
Add butter to sugar in mixing bowl and beat

Measure 4/5 cup of nuts, put into glass
Mix 2 teaspoons Baking Power into Graham Cracker Crumbs and mix
Add 1 teaspoon of Vanilla to a bowl of 3 Eggs, mix/beat with fork
Measure 3/4 cup of half and half

Throw in eggs, and nuts, and beat
Start adding crumbs and half and half and keep beating

Heat cast iron skillet over flame until quite warm. Add about 1 tsp. 
of Wesson oil to coat bottom. Heat and pour or wipe out any excess 
so only the bottom of pan is covered. Pour in cake mixture. Transfer 
to oven and cook X (see next) minutes at 400 degrees. Yummy! 

Cooking time varies depending on altitude. At 5700 feet cooking time 
is 20 minutes. At sea level, cooking time is doubled to 40 
minutes.  Bake for 27 minutes in Saugatuck.

Note: Crackers may be crumbled fine by placing in a plastic bag and 
rolling with a rolling pin (or a Zip-Lock bag and walking on it). Do 
not use store bought graham cracker crumbs - just not the same.
